280 grams Pastry flour
1 sm can Mandarin orange (180 grams)
1 Tbsp grated Orange peel
2 ½ tsps Baking powder
½ tsp baking soda
2 eggs
80 grams sugar
80 milliliters vegetable oil
100 milliliters Tangerine juice
150 grams Yogurt (0.1% fat)
For the filling
Orange marmalade
For decoration
Mandarin orange
powdered sugar

Preparation steps

1.

Grease muffin pan or use paper muffin cups.

2.

Drain mandarins and reserve juice.

3.

Combine flour with mandarins, orange zest, baking powder and baking soda.

4.

Whisk eggs in a large bowl. Add sugar, oil, mandarin juice, yogurt and flour mixture. Mix gently.

5.

Pour half of batter into muffin cups and fill each with 1 teaspoon of marmalade. Add remaining batter. Bake in preheated oven at 180°C (approximately 350°F) for 25 minites. Remove from oven and cool slightly. Transfer to plate and dust with powdered sugar and top with mandarins, Serve warm.
