Orange blossom water is not usually available at grocery stores, but can be found at middle eastern specialty stores.

- 1 cup all-purpose flour (heaped)
- ½ Tbsp Baking powder
- 1 pinch salt
- 2 Tbsps sugar
- ½ cup 2% milk
- 1 small egg (beaten)
- 1 Mandarin orange (finely grated zest)
- Orange blossom water (optional)
- ⅛ cup vegan or regular butter (melted)
- To decorate
- 2 Mandarin orange (peel cut into thin strips, white pith discarded)
- ½ cup sugar
- ¼ cup water
- Orange blossom (flowers and leaves)
Preparation steps
1.
Heat the oven to 200°C / 400°F. Place paper liners in 6 muffin tins.

Sift the dry ingredients into a mixing bowl.

Whisk together the milk, egg, zest, orange flower water and melted spread.

Make a well in the centre of the dry ingredients and pour in the milk mixture. quickly stir until just combined.

Spoon into the paper liners and bake for 15-20 minutes until golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.

To decorate: put the mandarin peel strips into a pan, cover with cold water, and bring to a boil. Drain well.
7.
Heat the sugar in a pan over a low heat until golden. Do not stir. Add the water and heat gently.
8.
Add the mandarin peel strips and bring to a boil. Cook for 5-10 minutes until the peel is translucent. Remove from the heat and set aside to cool.
9.
Place strips of peel and the flowers on the muffins.
