Preparation steps

Peel and finely dice the onion and garlic. Rinse the chile, halve, remove seeds and ribs. Cut the chile into fine strips. Sweat prepared ingredients in hot oil, adding turmeric. Peel and thinnly slice the ginger. Peel the mango, cut the flesh from the core and dice.

Combine the ginger and the onions. Deglaze with the vinegar. Stir in the lime juice and orange juice. Stirring occasionally, simmer for 20 minutes until thick. Season with salt and leave to cool.
