120 grams sugar
30 grams cane sugar
1 Tbsp Lime juice
4 egg yolks
12 egg whites
30 grams butter
1 pinch salt

Preparation steps

Peel the mangoes, remove the pit, chop the pulp coarsely, and puree with the sugar in a blender. Add the egg yolks and lime juice, and puree again for 30 seconds.

Whisk the egg whites with a pinch of salt and 30 grams (approximately 2 tablespoons) of turbinado sugar until stiff. Carefully fold the egg whites into the mango puree. Grease small ramekins with butter.

3.

Pour the mango mixture into the greased ramekins and bake in a preheated oven at 150°C (fan: 130°C, gas mark 2) (approximately 300°F) for 12-15 minutes.
