Ingredients
- Ingredients
- 8 fresh King prawn (peeled and deveined)
- 2 stalks Leeks (rinsed and trimmed)
- salt
- freshly ground peppers
- 2 garlic cloves
- 2 Tbsps chopped parsley
- juice of lemons
- 4 Tbsps dry sherry
- 1 Tbsp honey
- 1 Tbsp freshly grated ginger
- 6 Tbsps sesame oil
- 1 Tbsp Sesame seeds
- 1 lemon (cut into slices)
Preparation steps
Cut the leek into 15 cm (approximately 6 inch) long pieces. Cut lengthwise through the middle, then blanch 8 leaves briefly in boiling salted water. Remove from the water, rinse under cold water, and drain thoroughly.
Peel the garlic and pass through a press. Mix the garlic with the ginger, parsley, honey, lemon juice, sherry, and 4 tablespoons of sesame oil. Season to taste with salt and pepper. Add the shrimp to the marinade, and toss until coated. Marinate for 20 minutes. Remove from the marinade, and wrap the shrimp in the blanched leeks. Place the shrimp onto wooden skewers.
Heat the remaining oil. Sauté the skewers slowly for 5 minutes. Add the marinade and sesame seeds. Heat through, then remove the shrimp from the pan. Garnish with the lemon slices, and serve.
