Preparation steps

Rinse and peel the potatoes. Cut into quarters, then boil in salted water for 25 minutes until tender. Drain the potatoes, reserving 70 ml (approximately 2 ounces) of the cooking liquid. Warm the milk. Mash the potatoes using a potato masher. Mix in the milk and the cooking liquid until smooth.

Peel the garlic. Heat the oil in a pan. Pass the garlic through a press into the pan, and sauté for 2-3 minutes. Mix the goat cheese and garlic into the potato puree, and stir until incorporated. Season to taste with salt and pepper, garnish with the chopped basil, and serve.
