200 grams Spinach

Preparation steps

1.

Peel potatoes, dice and cook for 15-20 minutes in the steamer. 

2.

Rinse spinach. Blanch in boiling salted water for about 1 minute, drain and rinse in cold water. Squeeze and puree with an immersion blender. 

3.

Mash potatoes with a potato masher or press through a potato ricer. Stir in spinach puree and 100 grams (approximately 3 1/2 ounces) of goat cheese. Season with salt and pepper and arrange in bowls. Garnish with remaining cheese and serve.
