400 grams waxy potatoes

200 grams Snow peas
160 grams Couscous
200 milliliters Vegetable broth
1 day-old White roll
600 grams Ground lamb (or ground beef)
1 egg
1 tsp hot Mustard
2 Tbsps clarified butter
2 Tbsps butter
lemon juice
1 tsp dried cilantro
freshly ground peppers

Preparation steps

1.

Rinse the potatoes and cook for about 20 minutes in boiling salted water.

Rinse and trim the sugar snaps and blanch in boiling water with a pinch of salt for 3-4 minutes. Rinse in cold water and drain well.

Pour the couscous into a bowl, pour the boiling broth over it and let soak for about 10 minutes.

For the meatballs, soak the bread in lukewarm water.

Mix the ground beef with the egg, squeezed-out bread and mustard, season with salt and pepper and form 8 meatballs. Fry until golden brown in a hot pan with butter. Reduce the heat and keep the meatballs warm.

Drain the potatoes, peel and let cool. Cut into small cubes and fry in a hot pan with melted butter until golden brown. Add the snow peas and couscous and sauté briefly. Season with lemon juice, salt, pepper and cilantro to taste and spread it on a warm platter. Serve the meatballs on top of the couscous.
