Meatloaf

- 800 grams Ground meat
- 2 onions
- 1 tsp Curry powder
- 1 tsp Tomato paste
- 2 eggs
- salt
- freshly ground peppers
- 2 kaiser rolls (from the day before)
- 2 Tbsps vegetable oil
- 200 grams Celery
- 1 carrot
- 400 milliliters Beef broth
- 200 milliliters Whipped cream
- Herb bouquet (for garnish)
Preparation steps
Step 1
Soak rolls in warm water. Peel the onions and cut 1 into thin strips. Squeeze rolls and tear into pieces. Combine rolls with ground meat, onion strips, curry powder, tomato paste and eggs in a bowl.
Step 2
Mix well and season with salt and pepper.
Step 3
Form mixture into a loaf and put it in a pot or a high-sided, ovenproof skillet. Brush with oil. Bake in preheated oven at 180°C (approximately 350°F) for about 20 minutes.
Peel celery and carrots and dice into cubes. Dice remaining onion into cubes.
Remove meatloaf from skillet and add the prepared vegetables to the skillet. Sauté briefly on stovetop and pour in broth. Return meatloaf to skillet on top of vegetables and bake in the oven about 40 minutes.
Step 4
Remove meatloaf from skillet and let meat rest. Pour cream over the vegetables in the skillet. Cook on stovetop until slightly reduced and season with salt and pepper.
Step 5
Cut meatloaf into slices and arrange on the vegetable sauce on a platter. Serve garnished with herbs.
