For the mashed potatoes
700 grams potatoes
2 Tbsps butter
100 milliliters milk
salt

For the vegetables
400 grams Okra
1 sm can Tomatoes
100 grams Corn (from a jar)
2 Tbsps butter
salt
freshly ground peppers
For the meatloaf
800 grams mixed Ground meat
1 onion
20 grams butter
1 kaiser roll (day-old)
1 egg
2 Tbsps Tomato paste
1 tsp Mustard
salt
freshly ground peppers
50 milliliters Barbecue sauce (finished product)

Preparation steps

1.

For the meatloaf, soak bread in water. Peel onion, finely chop and saute in butter. Mix meat with onion, expressed bread, egg, tomato paste, mustard and season with salt and pepper. Knead and shape into a loaf. Place in a greased roasting pan and cook in a preheated oven at 180°C (approximately 350°F) for 60 minutes. When 10 minutes remain, brush meatloaf with barbecue sauce.

For the mashed potatoes, peel potatoes and cook in boiling salted water until knife-tender, about 25 minutes. Drain and mash with a potato masher with butter and milk. Season with salt, pepper and nutmeg. Stir in chives.

For the vegetables, rinse okra and cut into thick slices.

Boil okra with chopped tomatoes, including juice, in a pot. Simmer uncovered for 15 minutes. Add corn and season with salt and pepper.

5.

To serve, slice meatloaf and serve with mashed potatoes and vegetables.
