- 1 Tbsp butter
- 1 onion (peeled finely chopped)
- 1 clove garlic cloves (finely chopped)
- 2 ribs Celery (finely chopped; reserve the leaves for garnish)

- 2 slices Bread (crusts removed)
- 16 ozs ground Beef
- 1 egg
- 1 tsp Mustard
- 2 Tbsps vegetable oil (divided)
- 6 slices Bacon
- 32 ozs potatoes (peeled and halved)
- 2 lemons (juice one lemon; slice the other)
- 1 sprig fresh rosemary (leaves chopped)
- 2 sprigs thyme (finely chopped)
Preparation steps

Preheat oven to 375º F / 190º C. Position oven rack to center position.

Heat the butter in a skillet and saute the onion, garlic and celery for about 5 minutes over low to medium heat. Season with salt and pepper.

Soften the bread in a little water. In a large bowl, combine the beef, egg, mustard and the onion mixture. Squeeze the water out of the bread and add the bread. Mix everything thoroughly and season generously with salt and pepper.

Brush the bottom of a large roasting pan with 1 tbsp oil. Shape the meat into a loaf shape in the pan and lay the bacon slices over the top.

Place the potatoes in a bowl with the remaining oil. Add the rosemary, thyme, lemon juice and season with salt and pepper and mix well. Place the potatoes around the meatloaf.

Bake the meatloaf and potatoes on the middle rack for 55-60 minutes, until the meat is cooked through and the potatoes are tender. Turn the potatoes occasionally during the cooking time.
7.
Garnish the meatloaf and potatoes with celery leaves and lemon slices. Serve.
