3 Tbsps olive oil
1 kaiser roll (from the day before)
1 onion
2 hardboiled eggs
1 red chili pepper
750 grams Ground beef
2 Tbsps Tomato paste
1 Tbsp chopped parsley
salt
peppers (from the mill)
ground paprika (sweet)
1 garlic clove
1 red and yellow Bell pepper
1 can Corn kernel (drained weight: 285 g)
800 grams stewed Tomatoes (dose)
1 generous pinch cayenne pepper
½ tsp sugar
cilantro (for garnish)

Preparation steps

Soak bread in lukewarm water. Peel onion and chop finely. Peel eggs and chop. Cut chile in half lengthwise, remove seeds, rinse and finely chop.

In a pan heat oil and sauté onion. Squeeze bread and mix with meat, onion, eggs, chile, tomato puree and parsley. Season with salt, pepper and paprika. Form a long loaf and place in a greased baking dish.

Bake meatloaf in a preheated oven at 180°C convection (approximately 350°F) for 60 minutes.

Peel garlic and chop finely. Rinse peppers, halve, remove seeds, remove white interior and cut into small cubes. Drain corn. Mix garlic, paprika and corn with chunky tomatoes in a bowl. Season with salt, cayenne and sugar.

About 20 minutes before meatloaf is done, warm up tomato sauce. Serve meatloaf with tomato sauce and garnish with coriander.
