Preparation steps

Preheat the oven to 180°C (160 fan) | 350°F | gas 4.

Rub the vegetables with oil and season with salt and pepper then roast for 20 minutes.

Lightly beat the eggs and stir in the vegetables.

Pour the mixture into a small baking dish and bake in the oven for 20 - 25 minutes or until just set in the centre. Sprinkle with basil and serve warm or at room temperature.
