- 7 cups colored Fusilli (or similar pasta)
- 4 Tbsps olive oil
- 2 Tbsps white balsamic vinegar
- 2 Tbsps lemon juice
- ½ Dijon mustard
- 1 tsp dried herbes de Provence
- 3 cups mixed Lettuce (e. g. radicchio, endive, iceberg, leafy, torn into pieces)
- 1.333 cups cherry Tomatoes (quartered)
- 1 cup black Olives (pitted and halved, such as Nicoises)
- 2 scallions (finely sliced)
- 2 balls Mozzarella (approx. 1/2 cup)
Preparation steps

Cook the pasta in boiling, salted water until al dente. Drain and rinse.

In a salad bowl, mix together the oil, vinegar, lemon juice, mustard, herbs, salt and ground black pepper.
3.
Add the vegetables, pasta and the mozzarella and mix with the dressing. Season to taste and serve topped with ground black pepper.
