Peel potatoes and cook in a pot of boiling salted water for about 30 minutes until knife-tender. Toast pine nuts in a dry skillet until golden brown. Let cool and chop together with olives and sun-dried tomatoes. Rinse basil, shake dry and pluck leaves off stems. Chop basil.

Drain potatoes and press through a potato ricer into a large bowl. Heat milk and oil together in a pot. Gradually stir hot milk into potatoes with a wooden spoon. Add pine nuts, olives, tomatoes and basil to the bowl, mix and season with sea salt and a pinch of chili pepper. Serve while hot.
