3 Tbsps tomato puree
4 English muffin (bases)
1 yellow Bell pepper (seeds removed, thinly sliced)
1 Zucchini (thinly sliced)
½ Red onion (thinly sliced)
2 cloves chopped garlic cloves

½ cup Mozzarella (chopped)
2 Tbsps Pine nuts
olive oil (for drizzling)
To garnish

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a baking tray.
2.
Spread the tomato puree over the muffin bases.
3.
Arrange the vegetables and garlic on top and season to taste with salt and pepper.
4.
Sprinkle with the cheese and pine nuts and drizzle with oil.
5.
Cook for 10-15 minutes, until the vegetables are tender and lightly browned. Sprinkle with torn basil.
