- 12 small Artichoke
- 1 lemon
- salt
- 2 garlic cloves
- 7 ozs Italian sausage (Salsiccia)
- 7 ozs Mushrooms
- 4 red banana peppers
- 3 sprigs rosemary
- ½ cup green Olives (pitted)
- ½ cup black Olives (pitted)
- 0.111 cup Caper
- ⅔ cup olive oil
- freshly ground peppers
Preparation steps
1.
Rinse, clean and remove the tips (the upper 1/3) of the artichokes. Remove the tough outer leaves. Remove the stem, the lower portion of the hard bottom and any fibers.

Squeeze the juice from the lemon. Pour some lemon juice over the artichokes (this prevents them from darkening).

Boil the artichokes in salted water for 8 minutes. Drain and allow to cool until lukewarm.

Peel the garlic cloves.
5.
Cut the salsiccia into slices.
6.
Brush the mushrooms. Slice any large ones in half.

Slice the peppers in half. Remove the ribs and seeds. Slice into wide strips.

Saute the sausage pieces in 2 tbsp of hot oil. Put them in a flat dish.
9.
Add the remaining lemon juice, garlic cloves, mushrooms, peppers, rosemary, olives, capers and olive oil. Season with pepper and mix together thoroughly. Allow to sit for at least 2 hours before serving. For best results, overnight.
