- 60 grams Millet
- 3 Tbsps Canola oil
- 1 large onion
- 250 milliliters Vegetable broth
- 250 grams Cucumber
- 3 Tbsps canned Corn kernel
- 1 Tbsp lemon juice
- 1 tsp balsamic vinegar
- salt
- freshly ground peppers
- 6 sprigs Dill
- 120 grams snow crab (pre-cooked)
Preparation steps

Rinse the millet. Heat 1 teaspoon of canola oil in a large skillet and toast the millet for 2-3 minutes. Peel and finely chop the onion, add to the pan and sauté briefly. Stir in the vegetable broth, cover and simmer for 15 minutes over low heat. Peel and dice the cucumber, drain the corn kernels and to the millet.

Whisk together the lemon juice, balsamic vinegar and remaining canola oil and season with salt and pepper. Rinse the dill, pat dry, set one piece aside for garnish and finely chop the rest. Add the chopped dill and shrimp to the salad, drizzle with the dressing and mix well. Transfer to serving bowls and garnish with the reserved dill.
