250 milliliters Vegetable broth
100 grams Millet
2 carrots
4 leaves Lettuce
250 grams crayfish
2 Tbsps Sesame seeds
2 Tbsps lemon juice
2 Tbsps white balsamic vinegar
2 Tbsps olive oil
salt
freshly ground peppers
1 tsp liquid honey
cilantro (for garnish)

Preparation steps

Peel shallot and finely chop. Heat 1 tablespoon oil in a saucepan, briefly saute shallot and deglaze the saucepan with broth. Rinse millet in a sieve and add to the saucepan. Cover and simmer for about 15 minutes. Remove from heat and let soak covered for 15-20 minutes. If necessary, add a little broth. Millet should have absorbed all liquid at the end.

Peel carrot and cut or slice into thin strips. Rinse lettuce, trim, shake dry and cut into strips. Rinse crawfish and pat dry. Toast sesame seeds in a hot, dry skillet and let cool slightly again.

For the dressing, mix lemon juice in a bowl with vinegar, remaining sesame oil, olive oil, and honey and season with salt and pepper.

Layer carrots, millet, lettuce and crawfish meat in jars, sprinkle with sesame seeds and drizzle with the dressing. Serve garnished with cilantro.
