Minestrone

- 150 grams Spaghetti
- salt
- 1 carrot
- 3 sheets Green cabbage
- 250 grams green Asparagus
- 100 grams Snow peas (in the bowl)
- 200 grams white Beans (canned)
- 2 small onions
- 2 garlic cloves
- 2 Tbsps olive oil
- 150 grams diced Pancetta
- 1 bay leaf
- 1 Vegetable broth
- freshly ground peppers
- 1 handful Basil (for garnish)
- 50 grams freshly grated Parmesan (for garnish)
Preparation steps
Cook pasta in a pot with plenty of boiling salted water until al dente, drain, rinse with cold water and drain again.
Peel carrot and cut into 5 mm (approximately 1/5 inch) thick slices. Rinse cabbage leaves, pat dry and cut into bite-size pieces. Rinse asparagus, peel bottom third, cut each stalk in half lengthwise and then cut into 5 cm (approximately 2 inch) long pieces. Rinse peas. Drain white beans. Peel onion and garlic and finely dice. Heat oil in a large saucepan and saute onion and garlic until translucent. Then add bacon, carrots, cabbage, peas, white beans and asparagus, mix, add bay leaf and broth and season with salt and pepper. Simmer for about 10 minutes. Finally cut pasta with kitchen scissors to about 7 cm (approximately 2 inches) in length, add to the saucepan and heat. Remove bay leaf and pour the soup into bowls. Serve garnished with basil and Parmesan.
