3 ozs whole cane sugar
1 organic lemon
1 Pear
2 eggs
2 generous pinches Vanilla powder (or 1 tsp vanilla extract)
6 ¾ ozs low fat Yogurt
8 ⅘ ozs whole spelt flour
1 tsp Baking powder
3 Tbsps honey

Preparation steps

1.

Grease the cups of the muffin baking tin with 1 tablespoon of oil. Remove 1 tablespoon of the sugar and sprinkle over the bottom. Rinse the lemon with hot water, rub dry, grate the zest and squeeze out the juice.

Peel the pear and cut horizontally into 12 slices, each about 1/4-inch thick, removing seeds; if necessary, cut or prick to fit bottoms of wells (save and use leftovers elsewhere). Brush pear slices with lemon juice and place in wells.

Beat eggs with oil, remaining sugar, vanilla powder, lemon zest and yogurt. In a mixing bowl, mix flour with baking powder. Then stir in the egg mixture briskly and pour onto the pear slices.

Bake the pear muffins in a preheated oven at 180 °C / 350 °F on the middle rack of the oven for approx. 25 minutes until golden brown (test with toothpicks). Remove and allow to cool for approx. 10 minutes. Carefully turn out of the tray and drizzle pear cakes with honey before serving.
