For the pizza dough
1 cup Quark (scant)
5 Tbsps olive oil
2 eggs
2 tsps dried oregano
salt
3 ½ cups all-purpose flour
3 tsps Baking powder
For the topping
1 clove garlic cloves
9 ozs tomato passata (strained tomatoes)
6 Tbsps tomato puree
peppers
11 ozs Mozzarella
1 cup grated Gouda
cup sweet Corn
1 ¼ cups black Olives (stoned)
1 large onion
2 yellow Bell pepper
5 ozs Cocktail tomatoes
Fat (for the baking trays)

1 Skillet, 1 Baking sheet, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Slotted spatula, 1 Aluminum foil, 1 Fork, 1 Citrus juicer, 1 Brush

Preparation steps

Mix the flour with the baking powder. Add to the quark with the eggs, oil, oregano and a little salt and knead to a dough. Grease one or two baking trays with oil. Divide the dough into 4-6 pieces and roll each out to a circle. Place on the baking trays.

Peel and press the garlic and mix with the passata, tomato puree and a little water. Add 1 tsp oregano, season with salt and pepper and spread on the pizza bases. Finely dice the mozzarella and mix with the Gouda. Drain the sweetcorn. Peel the onion and cut into rings. Wash, halve and core the peppers and cut into small strips. Wash and halve the cocktail tomatoes. Scatter the prepared vegetables on the pizza bases and sprinkle with the cheese mixture. Bake in a preheated oven (180°C, low shelf) for about 30 minutes, until golden brown. Serve garnished with fresh herb of your choice.
