1 ¼ cups Whole wheat flour
1 Tbsp Baking powder
1 tsp Mixed spice
1 ½ cups Dried Fruit (raisins, currants, cherries, etc.)
cup clear honey
½ cup sunflower oil
½ cup milk
1 unwaxed Orange (finely grated zest)

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Place 8 paper cases in a muffin tin.
2.
Sift the flour, baking powder and spice into a mixing bowl. Stir in the dried fruits.
3.
Whisk together the honey, oil, milk and orange zest until blended.
4.
Stir the honey mixture into the dry ingredients until just combined. The mixture will be lumpy.
5.
Spoon into the paper cases and bake for 20-25 minutes until risen and golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
