- 4 Chicken breasts (each 120 grams)
- salt
- freshly ground peppers
- 5 Tbsps olive oil
- 1 splash dry white wine
- 75 milliliters Chicken broth
- 300 grams mixed Lettuce (such as arugula, radicchio, baby spinach, Lollo Bianco)
- 200 grams Cherry tomatoes
- 2 Tbsps apple cider vinegar
- 2 Tbsps lemon juice
- sugar
- 2 slices Toast
Preparation steps

Rinse the chicken breasts, pat dry and season with salt and pepper. Cook in 1-2 tbsp hot oil in a frying pan on all sides until golden brown. Deglaze with the wine and pour in the broth. Cover and cook over low heat for about 10 minutes to stew.

Rinse the lettuce, clean, drain well and pluck small. Rinse and halve the tomatoes. For dressing, mix the residual oil with the vinegar and lemon juice. Season with salt, pepper and sugar.

From the slices of toast cut out 2 small hearts each and cook on both sides until golden brown.

Arrange the salad on plates and then distribute the tomato halves. Cut the chicken into strips, arrange on top and drizzle with the dressing.
5.
Serve garnished with croutons.
