6 Tbsps olive oil
2 onions (finely chopped)
1 red Bell pepper (chopped)
16 ozs Squid
2 chopped Tomatoes
2 cups fish stock
2 Tbsps sun-dried tomato paste
9 ozs raw, peeled shrimp
35 ozs white fish fillets (cut into large pieces)
salt
peppers
To garnish
parsley

Preparation steps

1.
Heat the oil in a flameproof casserole dish. Add the onions, peppers and squid and cook gently for 15 minutes, until softened.
2.
Add the tomatoes, stock and tomato paste. Bring to a boil.
3.
Stir in the prawns and place the fish pieces on top. Season to taste with salt and pepper. Push the pieces into the juices, then cover and cook in the oven for 20-30 minutes until the fish is cooked through.
4.
Garnish with parlsey
