- 3 egg whites
- 1 tsp lemon juice
- 1 pinch salt
- 180 grams powdered sugar
- 200 grams ground almonds
- 2 Tbsps cornstarch
- 2 Tbsps Coffee powder (Instant)
- ½ tsp cinnamon
- 1 Tbsp cocoa powder (for dusting)
Preparation steps
1.
Whip egg whites with lemon juice, salt and sugar until stiff and sugar has dissolved. Mixture should be glossy and cut-resistant.

Mix almonds with cornstarch, coffee powder and cinnamon. Fold into the egg whites.
3.
Place mixture in a piping bag with a small spout. Pipe circles on a baking tray lined with baking paper measuring 2-3 cm (approximately 1 inch) in diameter. Bake in a preheated oven at 150°C (approximately 300°F) for 25 minutes. Remove from oven and immediately move to a wire rack to cool. Sprinkle with cocoa and serve with coffee or tea if desired.
