2 red peppers (cut into strips)
4 tsps olive oil
4 large Portobello Mushroom (stalks removed)
½ cup Blue cheese (finely diced)
8 slices white Bread
½ cup processed Cheese spread
½ handful Basil (leaves picked and finely sliced)

Preparation steps

1.
Preheat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.

Mix the strips of pepper with 1 tbsp oil, brush the mushrooms with the remaining oil and place both on the baking tray. Season with salt and ground black pepper and bake in the oven for 15-20 minutes, scattering the blue cheese over the mushrooms during the last five minutes.
3.
Meanwhile, bake the bread slices for around 5 minutes until crispy.
4.
Remove everything from the oven, allow the bread slices to cool slightly then spread with the processed cheese. Place the mushrooms on top, divide the peppers between the sandwiches and scatter the basil over the top. Place a second slice of bread on top and serve.
