175 grams fresh shiitake mushrooms
1 bunch scallions
250 grams butter

Preparation steps

1.

Wipe and trim the mushrooms and chop finely. Rinse and trim the scallions and also finely chop.

2.

Sauté the mushrooms and scallions in about 2 tablespoons of butter. Then, add the remaining butter and allow it to melt. Season with salt and pepper.

3.

Transfer the mushroom butter to a small bowl, stir in the chives and leave to cool before serving.

This mushroom butter goes well with rustic white bread, rye bread or sourdough bread.
