1 Tbsp butter
400 milliliters milk
3 eggs
2 egg yolks

Preparation steps

1.

Trim the chanterelle mushrooms and chop. Peel the shallot, chop finely, and saute in a pan in hot butter. Add the mushrooms and cook for a few minutes. Season with salt and pepper.

Boil the milk in a pot. Beat the eggs and yolks together well, but not fluffy, and stir gradually into the hot milk. Season with salt and pepper.

Arrange the sauteed mushrooms and shallot into buttered molds, and fillwith the egg-milk mixture.

Place the molds in a large baking dish, pour hot water (80°C) (approximately 175°F) into the baking dish, and bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) for about 25 minutes. Allow the flan to cool in the molds and serve sprinkled with chives.
