Ingredients

For the pastry
1 ¾ cups all-purpose flour
cup butter (softened)
2 egg yolks
1 Tbsp caster sugar
For the filling
½ cup caster sugar
cup butter
Almond extract
2 eggs (beaten)
2 cups Almond flour
½ cup plain flour
3 Nectarine (thickly sliced)
2 Peaches (thickly sliced)
4 red Plum (thickly sliced)
To glaze
3 Tbsps Apricot Jam (jelly)
To decorate
Strawberries
Strawberry Leaf lettuce variety
Strawberry flower
powdered sugar

Preparation steps

For the pastry: mix together the flour, butter, egg yolks and sugar with your hands, to form a dough. Wrap in cling film and chill for 30 minutes.

Heat the oven to 190°C / 375°F. Lightly grease a 9" flan pan or tin.

Roll out the pastry on a floured surface and line the tin. Prick the pastry all over with a fork, line the pastry case with non-stick baking paper and fill with rice or dried beans. Bake for 10 minutes. Remove the paper and beans and prick the base with a fork. Bake for a further 10-15 minutes until golden and cooked through.

For the filling: whisk the sugar and butter together until smooth. Beat in the almond extract and eggs, followed by the almonds and flour.

Spoon into the pastry case, arrange the fruit slices on top and bake for 30-40 minutes until golden.
6.
Warm the jam and brush over the top of the fruit. Decorate with strawberries, strawberry leaves and flowers. Sift a little icing sugar over the top.
