Noodles with Sausages

- 300 grams Pastry flour
- 6 eggs
- 3 Tbsps vegetable oil

- 4 scallions
- 200 grams button Mushroom
- 8 Sausage (such as Nuremberg)
- 100 grams grated Cheese (such as Emmental or Bergkäse)
- freshly ground peppers
Preparation steps
Fill a large pot of salted water (filled up to 4 cm (approximately 1 1/2 inches) below the rim of the pot), cover and bring to a boil.
For the pasta, mix flour in a bowl. Beat eggs and add to bowl and season with 1 tablespoon oil, salt and nutmeg. Stir vigorously with the dough hook of an electric mixer or a wooden spoon until a viscous the dough bubbles. If necessary add a little water to reach desired consistency. The dough should fall from a wooden spoon.
Divide the dough into portions, scrape with a knife or a spaetzle press and add to the pot of boiling water.
Bring the pot to a boil, stir several times and skim spaetzle noodles out of the pot with a slotted spoon as noodles float to the surface. Rinse noodles in hot water in a colander and drain.
Rinse scallions, trim and easily cut diagonally into rings. Cut mushrooms in half or quarters, depending on size.
In a large pan, brown sausages in remaining oil for about 5 minutes. Add mushrooms and scallions and fry for another 2-3 minutes. Add spaetzle, mix, heat and cover with grated cheese. Season to taste with salt and pepper. Serve immediately.
