- For the cake
- 2 ½ cups self-rising flour
- 0.333 cup butter
- 1 cup Maple syrup
- 1 egg (lightly beaten)
- ¾ cup Evaporated milk
- 1 tsp vanilla extract
- ½ cup chopped Pecan
- To decorate
- 3 Tbsps Maple syrup
- ½ cup chopped Pecan
Preparation steps
1.
For the cake: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 23 × 13cm|9" × 5" loaf tin.

Sift the flour into a mixing bowl and make a well in the centre.

Beat the butter in another bowl until soft, then beat in the maple syrup. Beat in the egg, milk and vanilla until smooth.

Pour into the flour and mix well until blended. Stir in the pecans.

Spoon into the tin and bake for about 50 minutes until risen and and a skewer or cocktail stick inserted in the centre comes out clean. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
6.
To decorate: gently warm the maple syrup in a pan and stir in the pecans. Spoon over the top of the cake.
