Oatmeal Nut Bars
Ingredients
- For the bars
- 50 grams Banana chip
- 70 grams dried Figs
- 200 grams honey
- 140 grams cane sugar
- 100 grams Oats
- 2 tsps potatoes
- ½ tsp cinnamon
- 220 grams Spelt flour
- 1 tsp cream of tartar
- For the decoration
- 3 Tbsps liquid Blossom honey
- 2 Tbsps Oats
- whole, peeled almonds (or macadamia nuts; for decoration)
Preparation steps
For the bars, place banana chips in a blender and chop. Remove hard stems from figs and cut into small pieces. Mix honey and sugar in a saucepan, slowly heat over a low temperature until sugar has dissolved. Mix oatmeal, banana chips and figs to the saucepan and simmer for 2-3 minutes.
Set aside and let cool.
Preheat the oven to 180°C (approximately 350°F).
Mix potash in a bowl with a little water until smooth. Add flour, cinnamon, baking soda and potash to oatmeal mixture and stir. Pour oatmeal mixture onto a lightly floured work surface and knead. Roll out oatmeal dough until about 1 cm (approximately 1/2 inch) thick and place on a baking sheet lined with parchment paper. Bake in preheated oven for about 20 minutes. For the decoration, warm honey. Cut warm oatmeal bars into rectangles, brush with honey and decorate with oatmeal and almonds or macadamia nuts. Allow to cool and store in a dry place.
