For the vegetables
300 grams Okra
2 Tbsps vegetable oil
1 garlic clove (crushed)
For the sauce
1 shallot (chopped)
4 Tomatoes (peeled, cored and diced)
1 tsp sugar
100 milliliters white wine
lemons (juiced)
1 tsp cornstarch
butter

Preparation steps

For the vegetables, cook the okra in hot oil for about 5 minutes. Add the garlic and simmer briefly. Remove the pan from the heat and keep warm.

For the sauce, sauté the shallots in the butter and sugar and allow it to caramelize. Deglaze with the lemon juice and wine and reduce down by half. Thicken with the cornstarch. Add the tomatoes, season and simmer for 3-4 minutes.

3.

Serve the okra in a bowl with the sauce.
