2 cups dried Beans (pea beans, navy beans or pinto beans work well)
6 slices Bacon (thickly cut and chopped)
1 onion (finely diced)
2 Tbsps brown sugar
1 tsp salt
freshly ground Black pepper
½ tsp Dry mustard
2 Tbsps honey
2 Tbsps Molasses
2 ½ cups boiling water (plus more as needed)
toasted Bread (to serve)

Preparation steps

1.
Rinse beans in cold water and pick over. Place beans in a large bowl, cover with cold water and soak overnight.

Preheat over to 250º F / 120º C.

Cook bacon until crisp, about 5 minutes.

Drain beans and place in a bean pot or Dutch oven. Mix onion, brown sugar, and seasonings together. Add honey and molasses and mix to incorporate. Pour over beans, add bacon and stir until beans are well coated.
5.
Add boiling water; just enough to cover the beans in the pot. Cover bean pot or Dutch oven and bake in oven for about 7 to 8 hours, or until beans are tender, adding boiling water as necessary to prevent the beans from getting dry. Cook uncovered for the last hour, so beans will brown on top. Serve with toasted bread.
