¼ cup milk
2 cups quick-cooking Oats
2 Tbsps Oil
1 large onion (finely diced)
3 garlic cloves (minced)
1 cup fresh parsley (minced)
1 tsp Cumin
kosher salt (to taste)
freshly ground Black pepper (to taste)
1 bunch fresh Spinach (chopped)
1 egg (beaten)
1 ½ cups Feta (crumbled)
½ cup shredded Provolone cheese

Preparation steps

1.
Preheat oven to 350º F/ 175º C.

Combine pork with 2 eggs, milk, and oats. Set aside.
3.
Saute onion in oil over medium to low heat for 10 minutes or until translucent and golden. Add garlic and cook for 1-2 minutes or until fragrant.
4.
Combine meat mixture with onions, garlic, parsley, cumin, salt and pepper.
5.
In a 9" X 13" baking dish, shape 2/3 of meatloaf into a hollow shell.
6.
Combine spinach, 1 egg, and feta cheese. Fill spinach mixture into the hollow cavity of the meat loaf. Cover filling with remaining meat mixture.
7.
Sprinkle provolone over top; cover and bake for 1 hour. Remove cover and bake for another 10 minutes. Let stand 10 minutes before slicing and serve.
