1 bunch parsley
1 garlic clove

Preparation steps

Clean and slice the mushrooms. Rinse and dry the parsley. Remove the leave and cinely chop. Peel and finely dice the garlic. Heat the butter in a pan, and sauté the garlic, mushrooms, and parsley for 5 minutes. Season to taste with salt and pepper, and remove from the heat.

Beat the eggs in a bowl and season wtih salt, pepper, and nutmeg. Heat some butter in a pan and cook 4 omelets. Place 1/4 of the mushrooms mixture in the middle of each omelet, and fold the omelet over it. Garnish with parsley and serve.
