- 150 grams sugar
- 1 tsp lemon juice
- 3 eggs
- 2 egg yolks
- 70 grams sugar
- grated Orange zest (from one orange)
- Vanilla bean
- ½ l milk
- Oranges (for garnish)

Preparation steps

Grease the ramekins with butter. In a small saucepan, caramelize the sugar with 4 tablespoons of water and lemon juice until golden brown, stirring occasionally. Transfer immediately to the prepared ramekins.

Stir the eggs the yolks and the sugar. Add the orange zest to the egg mixture. Simmer the vanilla bean with the milk. Whisk the heated milk into the egg mixture and gently pour into the ramekins.

Place the ramekins in a high-rimmed baking pan and fill halfway with boiling water.

Bake in a preheated 160°C (approximately 320°F) oven for 50 minutes. Remove and let cool.
5.
Turn out the orange cream onto dessert plates and serve garnished with orange segments.
