150 grams of candied orange peel (diced) and butter (150 grams)
250 grams Pastry flour
50 grams sugar
1 packet Vanilla sugar
1 tsp Orange zest
1 egg
2 Tbsps Orange liqueur
For the filling
100 grams Orange marmalade
250 grams powdered sugar
5 Tbsps Orange juice

Preparation steps

For the cookies: Peel the orange and chop finely in a food processor.

Mix the flour with the sugar, vanilla, and orange zest in a bowl. Add the eggs, butter, orange liqueur and 1 tablespoon of cold water. Chop through with a knife until crumbly. Knead quickly by hand until smooth. Knead in the Cointreau.

Divide the dough into three portions and shape each into a roll. Freeze for 1 hour. Cut the rolls of dough into 4-5 mm (approximately 1/8 inch) pieces. Place on a parchment-lined sheet tray and bake in a preheated oven at 175°C (approximately 350°F) for about 8-10 minutes. Let cool on a wire rack.

For the filling: Spread half the cookies with marmalade. Stir the powdered sugar in a bowl with the orange juice until a smooth glaze forms. Decorate with the glaze and candied orange pieces.
