- For the ice cream
- 500 milliliters Orange juice
- 6 Kumquat
- 150 grams powdered sugar
- 2 egg whites
- For the garnish
- 6 Kumquat
- ¼ l Orange juice
Preparation steps

Rinse kumquats in hot water and wipe dry. Halve 6 pieces lengthwise and cut into fine strips, saving the juice. Mix the collected juice with 400 ml (approximately 1 1/2 cup) of orange juice and 50 grams (approximately 1/4 cup) of powdered sugar and set for about 2 hours in the refrigerator. Beat the egg whites until tiff, mix with the remaining orange juice, the remaining powdered sugar and kumquats. Stir everything with the cold juice, pour into a shallow metal tray and freeze, stirring occasionally in the freezer or finish in an ice cream machine.

To serve, scoop into balls fill in glasses. Cut the remaining kumquats into slices, mix with orange juice, and pour on the ice cream scoops.
