- 1 tsp butter (5 g)
- 3 Tbsps sugar (70 g)
- 1 Organic orange
- 150 milliliters
- 1 pinch salt
- 2 Tbsps Semolina flour (40 g)
- 3 eggs
- 1 Tbsp chopped almonds (15 g)
- 1 tsp powdered sugar (5 g)
Preparation steps
Grease 4 soufflé dishes with butter and sprinkle with 1 teaspoon sugar. Rinse orange in hot water, dry, zest half, remove remaining peel and juice.
Boil milk with 1 pinch of salt and 1 tablespoon sugar in a saucepan. Stir in semolina and bring to the boil. Add 1 teaspoon grated orange peel. Stir, pour in a bowl and cool.
Place a baking dish filled with 2-3 cm (approximately 1 inch) of hot water on middle shelf in oven.
Separate eggs and mix egg yolks into the milk mixture. Add almonds and 1 tablespoon orange juice and stir.
Beat egg whites until stiff and sprinkle with remaining sugar.
Carefully fold egg whites into milk mixture. Pour into prepared dishes, place in water bath and bake at 180 ° C (approximately 350 ° F) until golden brown, or about 20-25 minutes. Remove, garnish with orange zest and powdered sugar and serve immediately.
