- 8 cups Orecchiette pasta
- 1 Zucchini
- 1 Fennel bulb (root trimmed)
- 2 Celery (finely chopped)
- ½ bunch mint (chopped)
- Basil (chopped)
- ½ cup extra-virgin olive oil
- lemons (juiced)
- salt
- peppers

Preparation steps
1.
Cook the pasta in boiling salted water according to packet instructions. Drain and toss with olive oil.
2.
Meanwhile cut the courgette into small matchsticks and squeeze over a little lemon juice and salt to macerate.
3.
Finely chop the fennel and add to the courgette, along with the celery and herbs and mix well.
4.
Once the pasta is cooked, toss with the vegetables and add more oil to lubricate.
5.
Season well and serve.
