- 4 small Sea bream
- salt
- freshly ground peppers
- 1 lemon
- 2 tsps chopped thyme
- 1 tsp chopped rosemary
- 2 Tbsps chopped parsley
- 2 garlic cloves
- 150 grams room temperature Herb butter (homemade or finished product)
- 4 Tomatoes
- 6 Tbsps olive oil
- 2 Fennel bulb
Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse fish and pat dry. Rub with salt and pepper. Squeeze juice from lemon and sprinkle over fish. Peel and finely chop garlic, then mix with herbs and 2 tablespoons herb butter. Stuff mixture into the abdominal cavity of each fish. Rinse and slice tomatoes and fennel.

Coat four large pieces of aluminum foil with a little butter. Place a fish in the center of each piece and top with vegetables. Seal packets and transfer to a baking sheet. Bake about 35 minutes. Serve with remaining herb butter.
