- 42 ozs Sweet potato (4 sweet potatoes)
- 2 ¾ ozs dried Tomatoes in oil (8 dried tomatoes)
- 1 garlic clove
- 1 ¾ ozs black Olives (without pits)
- 7 ozs sheep cheese
- 1 Tbsp lemon juice
- salt
- peppers
Preparation steps
Wash sweet potatoes, place on 8" x 8" piece of parchment paper and secure ends with kitchen twine.
Place sweet potatoes on a baking sheet and bake in a preheated oven at 200 °C / 400 °F for about 25 minutes.
In the meantime, drain tomatoes, reserving 2 tablespoons of oil, cut tomatoes into coarse pieces. Peel and chop garlic. Chop olives finely.
Cut feta cheese into cubes and mix with tomatoes, olives and tomato oil. Season with lemon juice, salt and pepper.
Remove sweet potato packets from the oven. Carefully open paper, cut potatoes lengthwise, gently press apart and pour in filling. Leave sweet potatoes in oven for another 10 minutes to brown.
