- 12 Oyster
- 1 shallot
- 2 Tbsps lemon juice
- 4 Tbsps olive oil
- salt
- peppers
- 1 Tbsp scallions
- 7 ozs Watermelon
- 4 slices Toast
Preparation steps
Rinse and open oysters. Ridge sea salt on a plate and drizzle with a little ice-cold water. Serve oysters on salt bed.
Peel and dice shallots. Mix lemon juice with oil, salt, pepper, shallots and chopped chives to form dressing and season to taste.
Cut watermelon flesh into slices 5 mm (approximately 1/4 inch) thick and cut into hearts using cookie cutter. Toast white bread in toaster until golden brown and cut into hearts using cookie cutter.
Add watermelon heart to each oyster and drizzle with a little dressing. Serve with toast hearts.
