100 grams Sour cream
1 sprig oregano
3 small Tomatoes
1 Tbsp olive oil
300 grams Ground beef
100 grams Blue cheese (such as gorgonzola)

Preparation steps

Vigorously whisk eggs and sour cream. Season with salt and pepper. Rinse tomatoes, wipe dry and remove stems, then cut into slices. Rinse oregano and shake dry. Set aside 1-2 sprigs for garnish. Pluck leaves from stems and finely chop.

Heat olive oil in a pan and cook ground beef until crumbly. Add oregano to pan and cook for a few minutes. Pour egg mixture over ground beef. Evenly spread tomato slices and blue cheese in small pieces over mixture. Cover pan with a lid and cook over low heat for about 10 minutes, until cheese is melted and eggs are cooked.

Cut into pieces and serve immediately.
