300 grams mixed Nut (blanched: almonds, hazelnuts and walnuts)
100 grams dried Figs
100 grams mixed candied Fruit
1 generous pinch Ground clove
1 generous pinch Ground cinnamon
1 generous pinch ginger (ground)
1 generous pinch cilantro (ground)
1 generous pinch Nutmeg
150 grams powdered sugar
100 grams honey
50 grams Pastry flour
25 grams cocoa powder
4 Wafer (approximately 20x12 cm or 8x5 inches)

Preparation steps

Roast nuts in a pan while stirring, then remove from heat and let cool. Coarsely chop. Dice figs and candied fruits and combine with nuts.

Preheat the oven to 140°C (approximately 275°F).

Place powdered sugar and honey in a double boiler, stirring constantly, until mixture forms strings. Let to cool slightly. Stir honey mixture into fruit and nut mixture and stir in spices, flour and cocoa. Line a 20 cm (approximately 8 inch) square pan with wafers, pour in dough and smooth. Top with remaining wafers, press well and bake for about 40 minutes. Remove and let cool. Release from pan, slice and serve.
