4 slices thick white bread
4 Tomatoes
1 onion
125 grams Cucumber
½ bunch Basil
250 grams Mozzarella
2 Tbsps white balsamic vinegar
7 Tbsps olive oil
salt
freshly ground pepper
2 Tbsps Caper

Preparation steps

1.

Cut bread into cubes.  Heat 2-3 tablespoons of olive oil in a pan and cook bread until golden brown. Drain on paper towels. Rinse and pat dry tomatoes, cut into wedges. Peel and chop onion. Peel cucumber and cut into small cubes.

Drain mozzarella and dice. Halve garlic and rub salad bowl with it. Combine vinegar and oil, season with salt and pepper. Toss tomatoes, cucumber, onion and mozzarella with the dressing, top with bread cubes and capers, garnish with basil leaves. Serve.
