2 cups day-old Ciabatta (diced)
6 Tbsps olive oil
2 cloves garlic cloves (finely sliced)
2 cups Chorizo (sliced)
3 Tbsps white balsamic vinegar
4 Bell pepper (red and yellow, cut into strips)
1 Red onion (diced)
½ Cucumber (halved lengthways, seeds scraped out, diced)
1 handful parsley (finely chopped)

Preparation steps

1.
Fry the bread in 2-3 tbsp olive oil until golden brown and crispy. Pat dry with kitchen paper and heat another 2 tbsp oil in the pan. Fry the garlic and chorizo.

To make the dressing, mix the remaining oil with the vinegar, salt, ground black pepper and a pinch of sugar.
3.
Mix all the ingredients together, arrange on plates, drizzle with the dressing and serve immediately.
