Ingredients
- For the candied papaya strips
- ½ Papaya
- ½ Dragon fruit (dragonfruit)
- 1 Tbsp butter
- 2 Tbsps brown sugar
- 2 Tbsps Tequila
- For the tarts
- 4 ozs cream cheese
- 2 eggs
- 3 Tbsps butter
- 2 ozs sugar
- 2 Tbsps Papaya juice
- 1 pinch salt

Preparation steps
For the candied papaya strips: Peel the papaya and remove the seeds. Cut the flesh into thin strips. Peel the dragon fruit and scoop out the seeds. Chop the flesh.
In a pot, melt the butter with the sugar. Add the papaya strips and the dragon fruit pulp. Pour in the tequila. Simmer for 3-4 minutes. Remove from heat and then spread the strips on a parchment-lined baking tray and let cool.
For the tart: Drain the cream cheese, if needed. Separate the eggs. Beat the butter with the sugar until creamy. Mix the yolks with the cream cheese and papaya juice. Stir into the butter. Whip the egg whites with the salt until stiff. Fold into the cream cheese mixture.
Butter and sugar the soufflé dishes. Fill with 2/3 of the mixture and bake in a preheated oven for 15-20 minutes.
Remove the tart from the oven, carefully turn out of the ramekins and serve garnished with the candied papaya strips.
